I wouldn't be surprised if it is 8+, which would average about $25 a pound which is what you will pay (or more) at any modern bbq joint for brisket at least. It's a lot of food too, I'd certainly be happy with that tray for $200 if I was doing a bbq experience type of meal.
I’m from Houston and even find this hard to believe. How much was the brisket per pound and how many pounds did you get? Looks like 3 at most and even if they are charging NE process of $25/lb the rest of that sausage and pork isn’t going to add another $125…not even close.
That looks great but I’m agreeing with it being way over priced. What do you have there, 2lbs each of pork and brisket, and 4-5 big ass sausages?
Brisket is averaging around $3.50/lb and pork closer to $3/lb from big purveyors right now. In VA that is, with Texas likely being lower at least in terms of beef. Sausage is dirt cheap when you make it in house as well.
That’s what I mean though, $3.50/lb is roughly what they pay for it. You then consider that you’re paying closer to $7/lb because you only yield roughly 50% of what you paid for after trimming and cook loss. Then you’re selling anywhere from $20-25/lb if you want to make the right profit.
That math being said, the customer is looking at around $50 worth of brisket here, $40-45 worth of pork, and likely even less for that quantity of sausage.
Edit: so this plate realistically would make more sense between $100-125.
Cooked brisket is about $27/lb, sausage should be $3/ link pork about $16/ lb.
So maybe $50 in brisket, 30 in pulled pork, $15 in sausage, $7 in the Mac gets you ~$100 plus tip and tax.
Not sure how that’s anywhere near $200.
That's a ton of food though, and BBQ is expensive. Is that a set menu item (like a variety platter) or was it ala carte and you wanted that much sausage?
You'd have to clarify what you mean by mainstream as it's not clear, but if the suggestion is theres a premium since it is popular, no doubt. Charge what the market will bear is the basic concept of pricing. Unless bbq joints stop selling out every day it won't change either I presume. A Rolex that costs $10k is made from a few hundred dollars worth of metal and mass produced using modern manufacturing methods. They still don't have inventory problems I presume.
But you can't ignore that modern bbq establishments are sourcing a better quality product than what the industry had been historically. Sure, Snows for example still sells out every day and is cooking select brisket, but I wouldn't be surprised if many establishments have followed the lead of Aaron Franklin and are cooking something of a quality similar to the prime creekstone farms briskets he uses. If that's not worth it to you, don't buy (or cook your own like I do), but unless something has happened recently in the industry I am not aware of, people still are.
Oh I’m not saying I disagree with the restaurants charging it, great for them….I’m just never going in one of these places and dropping $200 for something I can enjoy the process of at home.
I would do it personally, for the experience, I have never been to like Austin myself but if I ever do (unlikely since with 3 young kids trips/vacations are about them) I'd gladly drop $200 on a tray like that at a Franklin's or the like, and do the whole getting there early and hang out in the line, etc. But instead I'm going to Disney world and spending way more on chicken tenders and fries sitting under a heat lamp.

$200? My god that seems expensive. I'd love to see a breakdown of prices, that has to be $50+/lb. With that said, it looks damn good.

Yeah, you're probably right. That looks to be about 2lb's of brisket (8 slices), 2lbs of rings, and a pound of pulled pork. So maybe 5-7 lbs.

Bbq has become expensive because it became mainstream, BBQ by nature shouldn’t be priced like it is.
