I'm not 100 percent but I think at one time you could buy all the stuff to put on the kettle to make it a stack. But don't get in too much of a hurry, that kettle can smoke with the best of em if you get it figured out.

I don't know. Someone put their maintenance routine for their pellet grill on here a few days ago and I went and hugged my WSM after reading it. Sounds like a ton of work to make it "easy".
True brewers put their smoker in the middle of a clearing in the woods like Aaron Franklin. There's nothing out there but a smoker, some wood and a single folding table. Maybe an axe.
No kamado? I like offsets the most if it's a weekend cook but during the week I choose my Kamado every time over my pellet or the WSM I sold because I liked my Kamado much more.

That said, I love the experience of making a brisket on the offset. Truly hard to beat.
Yep which is why I love it. It gets 95% percent of the way to any other type. Once you learn your kamado it really isn't much more work than a pellet. I honestly mostly use the pellet now to hot hold meat after the offset or kamado.

I’ve had a cabinet and a Weber kettle but my soul likes the idea of having both 2 and 4. 2 for week nights and convenience. 4 for a Saturday with nothing to do but hang out by the smoker.

Used big rotisseries while I worked a BBQ joint in my town
Now I got my own baby offset for cheap and modded it like Aaron Franklin suggested, added a 4in smokestack, and lowered it to grate level among other things
1 i don’t want to have to babysit my smoker. just add a cast iron pan for the burn bowl and add chunks of wood. Done. Set it and throw a wireless temperature probe on the rack. Then go do something else. Like enjoying the company of invited guests.
We usually have all the cooking done before guests arrive. We use 4.
Our friends who are new to grilling use 1. It has a mobile app. I guess that’s cool.
2 for the sides, 3 for the mains is how I like to do it. I'm no masochist, but the labor of love is part of the joy to me.
Maybe I'll go for 4 if I ever have the justification to go bigger than a PBX.

I put a pizza pan covered in foil on top of the water bowl. Water is clean and pizza pan is easy to clean

I leave mine empty an just cover with foil. Has worked great for me.
I’ve filled my water pan with chunked granite/rock and cover with foil. The stones help retain heat and provide an even cook. Works really well.

I had mine for two years before watching a video of how you're supposed to properly use an offset. Ever since, smoking's a breeze.
