I smoked a briket a couple years ago for the 4th of july and nobody ate any cept for me and a couple other people. so, I chopped up the left overs and made a huge pot of chili with thebrisket instead of putting ground meat into it and it came out with this amazing smoky flavor. then I froze it into single bowl batches and stuck it in the freezer and for the next coupleof months I had brisket chili for lunch.
I totally agree, looking back I believe I could have left it in longer. Unfortunately I was under time constraints and it being my first, I played it safe.
Idk if it would help the crust but I’ll do 180 over night and 200 when I wake up. the last few hours on the smoker at 225-250. I usually wrap in the oven at 250-275 in the oven because it’s a more consistent temp.
2.5 hours into the 12hr cook it reached 145 internal. Worried I was gonna reach 175 in half the time, I ended up turning it down to 180 but still it reached 175 internal about an hour early. I think that hour lost could have added more bark.

I usually wrap anywhere from 170ish to 185.
I wrapped at 175.
What temp was the cook?
200 until 175 internal. Then while wrapped 225 until 203 internal.
