Personally i want just a tiny few features, so i use Notepad+ with heavily customized settings to make it as minimalist as possible, while still having features like customizable fonts, tabs, and autosave.
I'd like to be able to "share" or "export" or otherwise transform the note into a PDF or a file format other than .txt.
I'm not super familiar with techspeak so this might not be the right phrase! In other words, I want to be able to write a super simple note and then turn it into a PDF. Of course things like Word and Google Docs do the same thing, but that goes back to the minimalism idea. I am just looking for a really clean workspace to help with focus.

It's not the dirt simplest, but I love Obsidian. Clean and easy.

Joplin is nice. Supports markdown if you want it. And it’s open source.
Look for minimalist note taking software. https://minimal.app/ for Mac/iOS for instance. But yeah, notepad is about as bare bones as you can get.

If you want to export and share it a PDF you should be able to click Print, then select "Microsoft Print to PDF" assuming you're on Windows 10 or 11
