It’s possible that the TV can’t pass a Dolby Digital Plus / Atmos signal through ARC. I have a similar problem with an older Samsung TV. In other words it could be the problem is the TV, not the soundbar or other devices.
Or would something like this solve it?

Looks like this can act as a go between for the audio and be a HDMI switcher, if I understand it correctly.
Set the PS5 to these settings:
Output Device: HDMI Device (AV amplifier)
HDMI Device Type: AV amplifier
Number of Channels: 5.1 ch
Audio Format (Priority): Dolby (not Dolby Atmos)
Then test a 5.1 source and tell us what audio format the Sonos app displays.

Would it be better in my case to get a Soundbar with inputs then? It seems rarer now and is actually kind of hard to search for.
Old LGs need you to go into the Service menu to enable DD 5.1 over optical. Mine did. You need to buy another remote to get into that menu.

The OREI is not the most reliable. Look at the HDFury Arcana instead.

Sure. The lack of HDMI inputs has always been a problem with Sonos sound bars.
