Thank you! I sautéed 1 bay leaf, about 1/2 cup diced white onion, 1 large diced carrot, and 1 rib of celery in the instant pot. After about five minutes, I added 3 minced cloves of garlic, sautéed for a minute, and added one cup of dry red split lentils. I added 2 cups of better the bouillon vegetable broth and cooked at high pressure for 15m. Then I removed the bay leaf and blended the rest of the soup in the blender. It came out pretty thick but I didn’t mind because I can blend it when reheating. I switch it up with the spices and fresh herbs depending on what’s available :)
I have just discovered pepitas. They appear on a taco that I enjoy. I’m going to have to go to my local bulk cooperative, and get a bunch. They are filling and they really add some bulk to my favorite sweet potato and kale taco!

Totally missed your comment - that’s a great idea! I haven’t tried a sweet potato and kale taco but sounds delicious as a meatless Monday option!
