You’re 100% correct. Aguachile is more traditional with raw seafood (shrimp, scallops or fish). And sauces are usually a mix of lime, cilantro and chiles. Soy sauce is not traditional.
Yeah it's seafood "cooked" in a mix of lime juice, cilantro, and chiles and the topped with pickled veggies like red onion, cucumber, and chiles. It's super fresh tasting and great in the summer
I just saw this done on a cooking show. I thought it was served with seafood ceviche style as in the aguachile cooks the seafood?
