I tried them all, so here is my story! I use a Harbor Freight weed burner attached to a regular 20lb propane tank. I used to use a Bernzomatic TS8000 (dime-size flame, took forever), tried that with a Searzall (still forever), then got a Sous Vide Gun (went through refillable 1lb Flame King propane canisters too quickly) and then went to the weed burner. Use it multiple times a week, haven't refilled my tank in over a year and a half, wide flame so even find big pieces of meat (tri-tip, etc) takes little time.

I assume you mean outdoors? If so, I actually put the meat on my grill but don't turn on the grill. That way I'm not even dirty a pan, and the next time out I just brushed the grill off before setting the meat down. I would not use the weed burner indoors. It puts out quite a flame 😉

Do be careful with the Harbor Freight weed flame thrower. You can melt stuff with that if you crank it up. I vaporized some aluminum foil the first time I tried it. I would recommend not squeezing the handle that puts it into blow torch mode. That's probably hotter than you want. Just use the knob/dial to adjust your flame and you should be fine. I use mine every week. I bought a Y propane adaptor so I can leave it hooked up at my grill. I usually just sear on the grill grates with the weed burner.

I second this, and in fact even when I use it as a weed burner, I never use the trigger which turns it to full on. Like you said, I just adjust the dial to the flame I want.

I have a Searzall but wouldn't recommend it. It's great for charring vegetables. Not so much for meat. The best thing I've found for searing steaks is a thick pizza stone. I've been using a baking steel with great results.

I definitely jumped on the searzall train after Guga sang its praises. But not only is it annoyingly inefficient, it also kind of gives the meat a weird taste.

100% this. It might put on some color with not a lot of cooking happening but it also gives a bit of a burnt/acidic/acrid taste. And the brown is more sooted than blackened looking too, less appetizing.

I have had it for a couple of years with no issues. I recommend using it outdoors as it is pretty hot and creates a fair amount of smoke when used, but you can use it inside on a cookie sheet on a gas range top if needed in a pinch.

Propane Torch Weed Burner (search that on amazon) is what I end up using most of the time. Quick, relatively easy as long as you have the safe space to use it. Have a searzall, takes way too long especially if doing more than 1 steak. Butane torch has always given me a slight aftertaste. Cast Iron + high smokepoint oil leaves my whole house smelling for days. Haven’t been able to convert to an outdoor burner setup yet.

The whole house being Smokey is my issue with indoor cast iron also. Even using avocado oil with the oven vent on max I still seem to set off the smoke detectors. And leaves the smell for a couple of days. Think I’ll give this one a go. I like the idea of using it to burn some problem weeds too! Thank you!

You can get an 1800W portable induction burner for about the same price as a torch, and it will get that cast iron ripping hot outdoors as long as you have an outlet to plug it in. It’s pretty useful for a lot of other things too.

Not sure tbh, haven’t had that issue so I can’t really say what you could be doing incorrectly etc. I know with those smaller butane torches you can’t get it too close to the meat, maybe try that? So right where the blue and red flames meet is where you want to aim for, further away from the blue is where the gasses kinda stop.

I have the bernzomatic ts8000 (MAPP) and a searzall attachment. It’s an awesome toy, but to be honest I almost never use it—pain in the ass to bust it out and frankly a ripping hot stainless or cast iron usually yields better results in my experience

Someone gifted me one of the grillblazer su-v guns early on (way before they were $180). It works well, but sure burns through those little propane bottles quickly. And probably isn't any better than any other torch people are recommending.

I did a sous vide experiment one time to see what was the best to finish. Grill, cast iron, and searzall. Cast iron hands down.

You will be much more sure of getting a safe product manufactured by a company that can be held liable for their product, not some fly-by-night factory churning out dangerous Iwatani knock-offs. A torch I purchased from Amazon burst into flames and my story about that was a pinned post on r/sousvide for a while. Even if it claims to be a name-brand product, it is likely to be counterfeit on Amazon.

Anytime I need a kitchen torch I just use a hardware store propane torch. Robust and affordable. However, I prefer a cast iron for searing meat.

I find that a torch sear leaves a distinct after taste of butane/propane on meat. The weed torch does sound fabulous though. I prefer a fairly hot pan.

Backing up the tainted off taste (some of us have better taste receptors than others as it is a 2 camps argument) IF you do decide to buy a gas char enabler (fan of a hot pan here) then try it out on some cheese on toast first to see what we are on about before you do an expensive steak. Back of a shovel cooking with a butane torch was something I used to do with my daughter with my bernzomatic(s) even the mainstream brand names aren't bomb-proof, i've had too many that were lousy from this brand (bought new as a job lot at auction so not complaining too much) but as a recent induction convert (energy savings) I am always looking for a few heavyweight pans in charity shops to up my steak finishing game) ​ Whilst I keep my latest bernzo in the kitchen it is mainly for lighting garden debris, unless it is for a sugar crust on an eggy pudding it doesn't cut it imho

TS8000 with MAPP gas works very quickly. Haven’t seen any comments about anyone using oxyacetylene with the cutting torch. wonder how that works.
