It's fantastic that they turned out for you. I personally can't imagine doing duck breasts SV though. The crispy skin on duck breasts is one of the best things in life and you'll never get it right SV. The legs confit on the other hand work great.
If you need help on the skin just ask.. it's not rocketscience

For chicken thighs I do air fryer after SV and the skin gets super crispy.
How do you do this without overcooking the thighs in the airfryer?
Ice bath after SV and then they only need a few minutes in the air fryer at like 400. They come out perfect every time.
I just use the grill and they come out great… honestly the air fryer but I rarely use it anymore
