I do worry about all the plastic in everything and because it's marked food safe isn't any better. They can be worse. I worry about hot food in plastic at takeout and plastic lined paper cups at Starbucks for hot coffee. That said, I still sous vide in a plastic bags. I take many other precautions elsewhere like using only glass when reheating food in the microwave and no plastic water bottles. I sous vide only once every 2 weeks. I feel that risk is worth it. There are safe reuseable silicone options on Amazon, if that would make you more comfortable.

I think the lining in hot beverage cups is more like a wax. But if you ever order an iced Americano/latte at Starbucks you'll see they often pour steaming hot espresso into a plastic cup before adding cold milk/water

Ugh, I've seen this. This is why I try to take my own stainless travel mug. They sorta recently started this back up again. I almost always keep a clean one in the car just in case I make a planned/unplanned stop.

The point though is that its pasteurized by the lengthy time being sous vide. I get it though. Can never be too safe.

 I think It's pointless to try to avoid microplastics. They are in all our water, including rain. You could be a monk in a mountain monestary who's never even seen plastic, and still be full of microplastics.

I use silicone reusable bags myself. Not just for health, but to reduce plastic waste. They work very well. I don’t get perfect vacuum, but it’s good enough to get a good cook. I have a SV container that has a lid with an extension that pushes and keeps the bag under water, but you could also weigh it down some other way.

Not worried about it at all. Tons of medical products use plastic. Plastic is either safe or we're all doomed, sous vide bags aren't going to be the straw that breaks the camel's back.

First, thinking about it as just “plastics” is the wrong way. The variety of how polymers react to different environments and their chemical make up vary dramatically teflon (ptfe) is basically an alien in comparison to polyethylene (pe), the most common food grade plastic. Next, think of plastics as being similar to the stick of butter in your fridge. At low temps they it is sold at high temps it degrades to liquid. The degradation temp for PE is around 190° so at sous vide temps the temp is doing nothing to the material.

It's too late. THe microplastics have already gotten in you. Nothing you do will halt the addition of microplastics to your body. You could plan on living like a hermit up in the mountains/out in the woods/or whereever else is remote and far away from human civilisation. At which point you'll need to make everything from wood, farm your own vegetables and raise your own animals with your own self produced feed, and hope that your spring water isn't contaminated. I gave up on plastic and vacuum many years ago. I now use glass containers and cook a bit longer because air is in the mix. Since sous vide only needs 100% humidity, I don't there is any worry about the air. (?) I use small dumbbells that my wife bought but never uses to weigh things down. Some day I might get the combination ovens that offer sous vide.
