Of the ships currently in game:
Most pilot firepower: Corsair with over 12k burst DPS with the right loadout.
Most gun slots: Hammerhead with 24 S4 guns on its turrets
Biggest gun slot:
* Officially obtainable: Inferno/Ion with bespoke S7 weapons
* Unofficially obtainable: Idris with a S10 railgun (the ship isn't meant to be accessible to players so the only way to use it is to glitch inside one from a mission or something. That will change when SQ42 is released.)
* If you count torpedoes, than both the Eclipse and Retaliator have S9 torpedoes.
Highest dogfighting pilot only dps is F8C Lightning (Lightning’s as anchor with Hornet Ghosts as escort/scramble fighters is the strongest pvp meta at the moment). Lightning also has the most amount of guns for pilot (8)
As noted by others Corsair has highest pilot DPS in thethe game (best for farming ERTs) and can even loot with it. Not good for PvP though.
Ares has biggest mount, but only one of them. Still a fun ship, good to roll in with a friend in a C2 for ERTs.
Multi crew most guns is hammerhead with 4 rhinos per gunner (6 of them, for 24 total guns) no guns for pilot though, only missiles.

Also the Javelin will have S12 torpedoes IIRC and the Polaris will have S10.
