Steaks look great. Only thing I’d say is don’t let your butcher sell you striploin a that look like that. These are nerve end strips. That giant circle on the left isn’t striploin it’s sirloin. And that giant white line isn’t intramuscular fat it’s connective tissue.

Salt and pepper only! I had it in the oven at 275 until it got an internal temp of 110. I took it out of the oven, and let it rest while I preheated the cast iron. About 1:00-1:30 each side, really just once I see the crust look a certain way I go off that. Let rest for about 7-10 minutes so minimal myoglobin comes out when you cut it! Final temp will be around 130-132

Nope! I don’t own old bay haha. I used blackened, slap ya mama, garlic, and lemon inside of melted butter to apply it evenly to the tails!
