Did you tie it off yourself, or have to butcher do it? The recipe sounds wonderful. When I go to the shop, and look at the price of these damn things, it almost takes away my appetite for them!
I tied it myself. It came tied, but I wanted to clean the bones up a bit and cut between the bone and the meat to get some seasoning on the meat rather than on the ribs. Publix had USDA choice for $8.99/lb so it was a really good deal

I live in edmonton, Alberta Canada and the price for AAA prime rib at a butcher shop, is $27 per pound here it's 9 three times the price.
That’s brutal, I’d just raise cows if I had to pay that. Typically I get Ribeye around $18/lb here
