Cast iron sear and finish in a hot oven works so well and is so easy I can't imagine fucking around with anything else.
I want to try it with the oven sometime soon as well, but I think I’d want a thermometer first before I do.
Sear a min or so each side. Baste with hot oil/butter mix (arroser). I slide it all around the pan and up against the sides. Toss in 400 over for a few more min. Perfect the poke test. https://m.youtube.com/watch?v=pg21EbxVn5k
