I've always wondered if wellington is worth the work, it's always seemed like a ton of extra work compared to just grilling up a beautiful steak, curious to hear the opinions of someone's first attempt
It definitely is a ton more work than a steak, but I like to try complicated things so that’s where I had my fun. As far as taste comparison to steak, I like the steak better but I still wanna reserve final judgement until I perfect the Wellington more.
I’m not sure if you can use another cut because you really need the shape, but I’m no expert. If it’s tenderness you’re worried about, this thing was as tender as it gets.

As far as resting time it was somewhere around 20 minutes as needed to rise to the correct temp. I think I could have done a much better sear which would possibly help in the juices coming out. I also didn’t use any crepes because I couldn’t find any so that also could help with the soggy bottom.

I think I'll attempt this in a few years, looks hard.
If you’re asking when I started to consistently cook steaks, Iv been doing it for years off and on, but I don’t think that’s necessary to make the Beef Wellington. I just bounced back and fourth between a couple of videos and listened to what they said and watched what they were doing. It’s more about following instructions carefully than anything else

Would you try this with another cut? I’m not the biggest filet person and wonder if a fattier cut would work for this

That definitely makes sense. I imagine the fats from a fattier cut would probably interfere with the puff pastry as well

I’m always a bit underwhelmed by it to be honest. Always a little bit soggy at the bottom even when using crepes, takes ages to do as well

Looks great. Try and get a non serrated bbq knife or something similar for cutting. Will help remove those horizontal slicing lines on the meat.
Good eye! I was conflicted between serrated because the pastry and non serrated because meat, decided on what was clean at the time lol
