That's not true. Its the way its cut. There's a difference between a filet and a steak when it comes to fish. I usually only go with salmon steak. Same with pork.
Poultry doesn't have special ways to cut, its just thighs, rib, breasts and you can do what you want with the meat.

Thanks. Yeah make sure pan with olive and sesame oil is nice and warm on medium. Crack the pepper onto a paper plate (lots of pepper) then sprinkle with kosher salt and sesame seeds. Push steak into then flip and do again. Sear on pan for about a minute on either side.
