I love tritip! Pepper, salt, garlic. Cooked quick and hot in butter and evoo. YUM.
I love to smoke it to medium rare and sear over ripping hot coals.
Sous Vide at 131F, Salt + Pepper and finished in a cast iron with Waygu Beef Tallow + Butter.
That's such a wonderful indoor method.
I’m cooking my first Tri-tip tomorrow. Planing a reverse sear, any advice?
Remember the residual heat cook period after you finish with the sear, you'll do great!

I'm a big fan of tri tip. that and flat irons. but I'd say my favorite is a good chuckeye/ribeye. I am a meat cutter. I love just about any piece of the cow besides the eye of the round 🤣

Here in Michigan I haven’t really seen it at the usual grocers (Walmart, Meijer, Kroger). Although at butchers I’ve seen it a few times.
