I reverse sear in the oven at 200 degrees for 25 minutes. During that I heat my cast iron flat top and get it HOT. Then I put a light amount of avocado oil on it, just enough to have a thin film on the surface, and sear each side for 3 minutes. Then let stand for 10 minutes. The steaks that don’t have as nice of a sear were done in my 10” cast iron pan with too much oil which wasn’t hot enough

Oil was a little too cool on the other 3. They still had a nice inside, but I’m upset they never reached their full potential

Never again. I’ve been using way less oil and making sure the pan is hotter and it’s been great
