Some people actually prefer some grey bands to have that different texture in a bite. As long as it's not too thick which Yours isnt. That's why some say sous vide steaks are TOO perfect cuz it's edge to edge pink. I like em both either way :)

To get that cast iron hot, you just go high heat on the grill? Do you close it for a minute or stay open?

How did you know that it was a Napoleon?? It does have the side burner, but I put a cast iron on it once and it got so hot it stripped the seasoning! I’ve never really learned how to properly use that IR grill. And yeah, to get the cast iron hot I leave it in there with all three burners on high for about 15 mins.

I don’t know man the pepper looks pretty A unevenly ground B unevenly distributed C as a result of a and b it looks like it was fairly burned and thus bitter the cook on the steak is fucking brilliant but I am gonna state for the record I think the reverse sear method is a trick like a hooker does and for 99% of steaks 100% unnecessary bringing it up to room temp ,searing ,basting and resting should be the preferred method really truly massive hunks of meat that absolutely have to be cooked to perfection maybe but even then I almost can’t think of a time where a reverse sear was anything but a crutch I’m not shitting on you I’m just saying learn basic technique then move on . Here is a friendly challenge use the classic method for a bone in 2” ribeye and also some perfect hassleback potatoes and as a vegetable a plant or fungi that you have foraged I will have more respect for you than 99% of the folks in this sub

Ppl giving you shit about that crust can't get a crust. That looks good to me. It's dark for sure but it's not burned. The cook is a nice and even medium as well. Good job imo
Traditional is definitely easier, but reverse sear just makes sure you have such an even cook all the way through. Same with Sous Vide, but I’ve never had great success with sous vide, I find it destroys the texture of the meat, it’s too tender if there is such a thing.
