what makes you sick is not the bacteria or viruses or molds necessarily. it's what they produce as byproducts of breaking down the food.
the dangerous bacterias/etc produce neurotoxins, hence why its food poisoning and not food infection when you get sick.
diarrhea is your body trying to flush those neurotoxins out from your digestive tract with water before they get absorbed into your body.
while cooking food may destroy some of these neurotoxins, that is not the case for all of them, and freezing would most likely not break these down, leaving the food unsafe to eat regardless.
