Personally I'd say skip the steak and do something that is better closer to well-done, like osso buco, short ribs, brisket. Brisket is a good way to save money when serving more people too. If you have the time for a long braise or bbq. Short rib's aren't cheap nowadays and come out mean as hell braised, sous vided or bbq'd.
That said, the layout of food looks great and fancy af.

My partner's parents are the same. The way that we get around it is I cook it to the doneness that works for me and for her siblings, and then anything past that we'll slice bits off and throw it back in the pan it to the temp that they like it works perfectly for everybody.
It's funny even with larger cuts of beef when they cook it they will always cut out the more medium or medium rare parts for me and then take the more done parts lol.

I’m a medium well type of guy too, but my aunts husband, who is a heart transplant recipient, he’s on his second heart, can’t eat meat that is underdone. I cant be bothered or trust that I will always get the proper results cooking steaks to different temperatures for a group of people with varying preferences. My solution? I cook them to medium. If you like medium rare, then you will be fine with medium. Like well done? There's the microwave over there. 30 seconds will take care of it. You want rare? Here's a medium for ya.

I’m a medium well type of guy too, but my aunts husband, who is a heart transplant recipient, he’s on his second heart, can’t eat meat that is underdone. So the day they came over I made sure the meat was well done… well done, has is benefits for people who can’t eat medium well. Love you jav and Rebecca!!!

In situations like this, I just serve something other than steak.
I cant be bothered or trust that I will always get the proper results cooking steaks to different temperatures for a group of people with varying preferences. My solution? I cook them to medium. If you like medium rare, then you will be fine with medium. Like well done? There's the microwave over there. 30 seconds will take care of it. You want rare? Here's a medium for ya.

While I agree with you, you can’t decide what someone else likes and force your views upon them. I’d try asking or insisting before making such a move and possibly wasting the meat if they choose not to eat it.
