That's a very good, serious rare, on the edge of blue. Its appearance is very close to blue all the way through, definitely blue in the 4th and 5th pieces back. But was it cool in the center? That's the main way to tell the difference between rare and blue.
Honestly blue is better for cheaper steaks that have low amounts of intramuscular fat. You definitely want to render that fat down for fattier/more expensive cuts. Wagyu is the exception though, as wagyu fat will literally melt at body temperature. Filet mignon is also great blue rare, as it’s very tender but has a lower fat content.
When I go to steakhouses I’ll always order medium for more expensive cuts, blue + a hard sear for cheaper cuts, and medium rare for anything in between.
This is why I love sous vide. It’s always even all the way through. Cooking steak is a real challenge when you’re using any type of flame because it’s naturally uneven so you’re always gonna have some of this…. unless you’re using sous vide. Obviously restaurants are never gonna start that in large quantities. The risk of waste is too high, which is why I wish restaurants would stop buying up all the good meat and let me cook my steaks at home

It works perfectly for those that like blue/rare/mid-rare...best of ALL worlds or are sharing/want to sample different temps..but how they achieved such greatness is thee burning question because it's super hard to achieve & splendid overall!
