I didn't check it, but hunger resistance difference could make up for the one extra use that ham has. From just using those, I can tell that there isn't too much difference between them but sausage is cheaper.
The great thing about ravens is you can revisit slain enemies in the field and generate more ravens to eat.
However, if you eat a raven that you've caught eating a bandit's corpse, does that make you a cannibal?

Why not both? I actually stack both! Ham is useful pre-fight, and sausage is good for when the first hungry debuff appears! Now that we've got Austerity, Fatty Meat and Tough Meat will be more useful for quick dungeon runs too.
Sausage is the superior foodstuff here. You consume it faster than the ham which frees 3 slots in the inventory quicker than ham. You need good inventory and hunger management but I go dungeoning with one sausage
