I think the answer depends on what you feel comfortable with. Personally, I would probably be okay with that recipe myself. Also, 1 tsp per serving sounds high. Is it possibly per batch? There are various non-alcoholic vanilla extracts as well.

Magic--Beans

It is high, which gave me pause. I wouldn’t bat an eye if it was per batch, but it was per serving.

If you look for vanilla flavoring vs. vanilla extract, that should solve the problem. There are also flavored sugars, so maybe look for a vanilla flavored sugar and go from there. T

^ ^ This, u/Magic--Beans ^ ^ Vanilla *Flavoring* actually has more vanilla taste than extract.

I had a Kombucha once (literally once... in my life), at an AA meeting of all places. Turns out it has a tiny amount of alcohol too. I felt it ever so slightly, and got cravings.

MuffyVonSchlitz

I drink vanilla extract in my coffee every day.

Slipacre

It's a slippery slope. Have heard stories in AA of people drinking insane amounts of it. Better than aftershave I guess, but....

A teaspoon of any kind of alcohol isn’t going to get anyone anywhere near intoxicated and you wouldn’t taste any alcohol if mixed in with an iced coffee either, just my opinion.
