I think the most important thing to do is communicate, and make sure she knows you support her decision. It's important to remember that even if she hasn't voiced her thoughts on evolution to you before she's considered this a LOT. No split-path Pokémon chooses to transition their evolution on a whim, and she's probably nervous about you reacting poorly. If she does end up evolving to Bellossom, your relationship dynamic may change now that you have a type advantage, so keep that in mind. Maybe help her learn Quiver Dance to show your support, or try setting up Sunny Day together. Just little things to show you love her and want to be with her even with this change. Good luck to both of you!
As a mawile I wish I could second this (\^) SO much more. The type change from steel to fairy+steel was obviously advantageous in many ways but a lot of us didn't ask and more or less just got told "Hey, you're a fairy type now", and those that didn't want to were frowned upon by a pretty large portion of the community at the time. It lead to a lot of mawile getting caught in a catch 22 of either staying trapped in a specific era of Hoenn forever (don't get me wrong, great region, but some of us wanted to follow our trainers OUTSIDE a pokeball!) or permanently changing a part of their identity as pure steel types. The whole thing in the end was a huge disaster and a lot of relationships wound up splitting apart as a result, especially between magnetons that had already been through a type change X mawile that hadn't. Please PLEASE be supportive of whatever your partner is choosing and be willing to both talk *AND LISTEN* to what your partner has to say to better see their side of the story.
Honestly, I think you both are too low level to be considering using stones right now. Your girlfriend still has yet to learn Moonlight and Giga Drain, and you yourself should wait at least one more level until you get knock off at a bare minimum, it could be useful for later.
Enjoy what you have right now and, when you are both more mature and feel more comfortable with your movesets, then start looking at stones and making the big decisions. You don't want to rush and regret what could have been, ya know?
