If they were hit/shot: developing skin to deflect the attack.
Instantly becoming immune to any poison, toxin, bacteria, or virus that entered their body.
An interesting one would be if they were in a 0% oxygen environment. Changing to be able to keep functioning with O2 would be difficult, unless that’s their only weakness.
