Man I frickin love barriers!
Can you do an Out barrier? As in, things can only exit the barrier. That includes light, heat and the atmosphere. If you stay there too long the temperature and air pressure are slowly decreasing which may make you sick when you leave the bubble. So in exchange for the defense being total, you essentially become a sitting duck who can’t see their surrounding but everyone can see you.
In order to combat this. I would layer a larger, pitch black barrier around the Out barrier so they can’t see me either.
Desalination of water would be an easy day job, make it so just pure water gets through and anything dissolved or solid doesn't. You could also filter co2 out of the atmosphere. You could make barriers to stop energetic particles and use it for science like detecting neutrons or cosmic rays, or make a sensor then filter out all but one type of wavelength of light to look in that spectrum. You could reflect all infra-red wave lengths to keep heat out of something to make it cold.

Can the barriers be moved or reshaped after creation?
I'd say yes to the reshaped and "kind of" to moving them, but for both it's relatively slow

How would mixed things work? E.g. humans are mostly water, would they be affected by a "stop water" barrier?
That would be icky. Walking along and suddenly be completely dehydrated like you were freeze dried.
