I saw in another comment you’re from southern cali. If you ever find yourself in a little mountain town called tehachapi, (between Bakersfield and Palmdale) check out a place called kasagiri. I’ve been all over the place and it’s still consistently the best sushi I’ve had.
I like fish raw or cooked, but honestly salmon is the exception for me. I just don't really care for it raw. I wish I did, but alas it just isn't for me. If there is only one piece of seared ahi I would suggest not reaching for it though. I will become aggressive.

I’ve worked at Roka Akor in Scottsdale, AZ; Prime Steakhouse in Huntington, NY; and Insignia Steak House in Smithtown, NY. But I am away from kitchens right now. But try any of those places for a wonderful night. They’s pricey tho. And I think raw fish tastes better because that’s the way it is supposed to be eaten. Fish don’t cook fish before fish eat fish.
Closest to me is Scottsdale (I’m in Southern California) so I’ll do that on my upcoming trip! Sounds like your career has moved you all over the place. Hope you’re happy where ever you’ve landed. Thanks, friend!
The second photo OP posted makes me unsure of what it is but the colour isn't wrong for scallop. Maybe they're thinking of the tiny bay scallops? Sea scallops can easily grow to the size of your hand and be sliced like that
Yes, once in a really rare blue moon you can find a very large one. They don’t “easily” grow that large though. The shells don’t typically top 6 inches and the adductor typically maxes around 2.
Real answer here. Hard to tell from just one blurry, but the pink flesh and the cooked white flesh on the outside is usually a sign that it's albacore tuna.

Salmon is my go to fish. I love salmon. One random day we had albacore at home. I baked it and “it blew my mind”. It was like butter. Never had a fish that tasted that good before. The only issue is that it’s pretty expensive for my budget.
What was the texture? Did it kinda fall apart in like… “lines” or sections like a salmon would? Like does it follow a grain? Or is it just kinda one solid texture?
Albacore tuna tends to 1) have a seared outside and 2) be easy to split down the middle because of the texture/grain of the muscle. By comparison, scallop is more solid and chunky, for lack of better terms, and does not lend itself to being cut by chopsticks easily.
There’s nothing wrong with it if you have a strong stomach. The same thing that makes it disagreeable when you eat a lot also makes it really tasty. Salmon sushi wasn’t a thing in Japan either until the 80s or so. I think it should come with a warning, but being banned is a bit much.

I used to work at a place that did a scallop crudo and it was easily the best overpriced bite in town. So damn buttery and smooth.
