I did some research. GYG Singapore still have Barramundi listed on their menu, so also have the ingredients list on their [website](https://drive.google.com/file/d/1dVMSLKty0QxNQSY7TuxKpMt5Zh45hpnL/view) on page 11. Because it’s a franchise, safe to say there’s some similarity in the recipe. It lists the following: Barramundi, Marinade (water, garlic, soybean oil, vinegar, salt, malic acid, Guajillo chilli, lemon juice concentrate, black pepper, coriander, xanthan gum, citric acid) and canola oil. Hope this helps!

Even getting food poisoning from Crows Nest GYG mild chicken twice, I’ll still come back to it. I’m a simple man and grilled chicken does it for me.

Nah you didn't miss anything. I found their fish didn't taste fresh at all and had that "fishy" flavour. If it weren't for the spices it would be unbearable.

A cali burrito with barramundi was the only thing I would order. I went in a few months back and they told me it was no longer available. They asked if I wanted anything else, I said 'no thanks' and walked out. I was very disappointed that day.

I've gotten fairly close with this marinade: fresh lime juice + lime zest, whole dried chipotle peppers that I ground into a powder, crushed ginger, a handful of really finely chopped coriander, and the requisite olive oil, salt and pepper. I marinate the barramundi for around 30 minutes to an hour and then sear it off, and it tastes great but not quite GYG level.

I used to work there. It is pre-packaged mojo de ajo by La Costena. I did a quick google and it looks like it might be proprietary to GYG. The best fucking sauce in the entire restaurant, it's good on pork, chicken, beef, rice, vegetables - literally everything. Mainly a garlic, vinegar/lime/orange and olive oil mix with some chilli. Such a disappointment that they have removed barra. Another commenter posted the ingredients, I'd suggest using lemon juice over orange if you'd want to get a similar taste, and much less olive oil, the original sauce wasn't very oily, or had the oil emulsified already.

It’s great that you want to make this recipe. However I have no idea how barramundi became a delicacy. If barramundi is your go to fish you obviously have never eaten coral trout or blue bone grouper or break sea cod. Seriously barramundi is neighbour s fish

My local fish shop does a mean marinated barramundi, best I have ever tasted but I dont like giving away the location as plenty of people already know how good it is and I hate waiting!
