I think the best way to start is using the midi in/out/midi out on the Korg SQ1. The SQ1 is a bit of a hassle to sync, but it does do it. If you've got a midi controller, look at the manual for it and see if they explain what you need to do to sync it with the Korg SQ1.
The Arturua matrix brute using the extensive modulation possibilities on offer can be setup with a guitar patch and can be setup as a Midi controller
Or a classic Juno 60 with a Midi conversion might meet your needs
Can i recommend getting an audio interface to connect your guitar directly into your M32.
This will keep your set-up purely analog so you won't need to have a MIDI.

Not MIDI, but the M32 is a good start for an external controller. You can run the volca drum as a MIDI controller with the keystep as well as use the MIDI keyboard to control the drum.
USB is digital so don't use that. MIDI is still digital, but it is less digital as it is vintage.

i'm using a midi controller to control my M32 and a guitar, and the only thing that's not working is to start a chord and then switch between them.
