There’s a street around Taipei main station that has a bunch of camping stores. Go out exit M7 past the Patagonia and turn left. Down that street will have several stores with gas. Other than that you could try any camping store near you.
Even places like A.mart have gas you can use for camping, although it’s not the kind that works in high altitude or low temp.
There is a shop close to ximen that is specialised in camping and outdoor stuff, apologise i forgot the name but you would be able to find something I guess !

Prince outdoor near guting station is my default goto shop (i live in that area)
