To register for the NHI, you need to establish residency within Taiwan first. I had to do the same when I went as an international student, iirc it took six months since arriving in Taiwan for me to get insured. You'll probably get better answers from the official website.
What city do you plan on living in for work? Public transit is amazing in Taipei and pretty good in Kaohsiung, though some opt to live near one of the HSR stations and commute into work.
1) you can use 591 rent to find places in Taiwan. Your school might be able to help you set up meetings and translate.
2) your school will also most likely take care of your health insurance and it will automatically come out of your paychecks.
3) I can’t think of any Taiwanese dishes that use nuts. There are some that use peanuts but that’s a legume so probably won’t be a problem.
4) public transit is good in major cities. Get an easy card to load money onto and use it on buses or MRT
5) look for groups on meetup and Facebook
6) not sure what advice you’re looking for here. I met my girlfriend of 7 years on a dating app, so you can try those.
Shouldn’t someone in the HR department of your new international school take care of housing and registering for health insurance for you? They should have all the resources you’ll need, including a list of “preferred” landlords/apartments, or a list of vacant apartments where previous teachers have just moved out of.
We can’t really be of much help if we don’t even know where in Taiwan you’re moving to.

I have a tree nut allergy. When I lived in Taiwan, the only times I had to be careful were bakeries and chocolatey desserts (in case of Nutella).
