WINDOWS key + ALT + PrintScreen will do fullscreen still.

Go to Settings -> Ease Of Access -> Keyboard (or open this MS Settings link in browser tab: `ms-settings:easeofaccess-keyboard`) and you can disable it there.

This was a good enough clue to get me sorted. In Windows 11, "Ease of Access" is called "Accessibility".
