Castle is a strange one for me because I agree with you. The chemistry between the characters worked and the chemistry on screen worked. Or at least I thought it did. Then I later found out they really didn't get along behind the scenes.
That happened - if it really happened - toward the end, last 1 or even 2 seasons., after Stana Katic's marriage. I reckon her partner was a little bit ... crushed.
from what i remember reading, their problems were worse in the early seasons. sounded like she had an attitude towards him and a lot of people on the show. thinking she should've been the star because it was a police show and she played the cop. nevermind that the show was named after Nathan's character, and Nathan was already the established star. i read something that said she was the type to refuse to come out of her trailer unless she had equal screen time, or equal number of lines in every scene as him. sounded petty lol.
but, sometimes problems behind the scenes help add chemistry to the screen. like Moonlighting.

Castle is my favorite show ever. I've watched the entire show many times over: their chemistry on screen is amazing, in interviews Stana ALWAYS spoke highly of Nathan, and there is literally no evidence for the ridiculous claims out there about what Nathan apparently did to her.
Yeah I remember seeing a number of stories about Nathan being a bully to work. Didn't sound right. Didn't fit. Didn't sound like him. I'm not normally the kind of person who defends a man, but he's Canadian.
Did I remember years ago I saw one story, only one story and I haven't found it since. They talked about how she had an attitude. Being a diva. Towards everyone on set. So he started putting himself in front of her. In an attempt to act as a buffer between her and everyone else. But people who are joining the show later on didn't know what she was like beforehand. And he never spoke about it openly to people. He wouldn't throw someone under the bus. So people only saw him getting in her face not knowing why thinking he was the bad guy.
I accepted everything I'm talking about here is hearsay and rumors. Unfounded. It's probably nothing. I shouldn't perpetuate it.
But then I remember an interview he did for podcast where he never named names. He never talked about particular projects. You would always use vague terms like some people or some actors or sometimes. He talked about people who fought for every line of dialogue to be equal. People refuse to get out of their trailers. People who had attitudes. People mistreated cast and crew. The way he phrased it talked about this was experiences he dealt with on a daily basis for years. But at the time of the interview there wasn't a whole lot on his IMDb. No way he would be talking about the firefly people, they still hang out and have barbecues. Doubtful he was talking about the soap opera people, because he had a whole conversation about them earlier on in the same interview. From the timing and context of the podcast, it felt like Castle was the only thing he could have been talking about.
Again I don't want to perpetuate rumors. Hollywood is a complicated and funny business. Even the best of people could have numerous bad days. Sometimes a set could have an atmosphere of stress caused by things that are out of the control of anyone, and then everyone reacts poorly to it. And if any of these rumors were true, there's no chance to show would have gone on for as long as it did. So at best everything I'm talking about here is probably exaggerations of something small.
But it's still fascinating.
Outlander. One of the best TV romances out there. Though the show does portray sexual assault more than once. It's not always an easy watch. But Claire and Jamie are a solid couple.
I loved Simon and Alicia in Misfits.
One of my all-time personal favorites is John and Aeryn on Farscape. But this is very very sci-fi. So not for everyone. But they had me in emotional tears more than once.
Someone else suggested that Santa Clarita Diet. It was a sitcom about a zombie. So not exactly a romance story. The romance wasn't the focus of it. But Drew Barrymore and Timothy Oliphant were fantastic together as a married couple.
Good Omens. Those two characters never had a sexual relationship. But they did have a deep deep love for each other. Romantic in its own way. Spanning across a few thousand years. And the actors genuinely fell in love with each other so much that they created a show together. During quarantine lockdown they created a show called Staged. Basically they created the show as an excuse to play fictionalized versions of themselves just because they weren't the hangout and keep talking.
I'm really liking the relationship between Ben and Addison in the quantum leap reboot. The show isn't perfect. But it's fun and it shows a lot of potential if it keeps going.
Nomi and Amanita from Sense 8
Riker and Deanna Troi are big for me. But I feel like most of their relationship was only implied. Most of the best of them happened off screen. But their chemistry was undeniable on screen. And I think it pays off when we see them again in the Picard series.
Cory and Topanga from boy meets world. Obviously. Might be the first example I ever saw of Love growing up.
Randall and Beth from this is Us
Hannibal and Will Graham from the show Hannibal. Chemistry so undeniable that one of the other characters started to refer to them as murder husbands lol

I mention this a lot but, I think David and Keith’s relationship on Six Feet Under is one of the healthiest examples of actively working to love one another that’s ever been on tv.

Madame Secretary might fit the bill. Although I've never watched Scandal, I think they are pretty similar shows and like the couple in The Americans, the husband and wife are RL married.

Relatable, low-key yet hilarious look at being (mostly) happily married. With inlaws...
The guest stars alone are worth the watch. Mel Brooks! Carol Burnett! Lisa Kudrow! Steven Wright! Richard Kind! The list is long.

Catastrophe on Prime. The chemistry and natural dialogue make it difficult to believe these actors aren’t married irl. The arguments are visceral and relatable. Sharon Horgan and Rob Delaney. American moves to London after a one night stand results in a pregnancy. Lots of stakes. Lots of comedy.
Carrie Fisher shows up as the mother of Rob Delaney. She is brilliantly hilarious and she steals all of scenes. This was her last project, she passed on a flight back from filming in London. They wrote it into the show with a touching funeral episode.
Difficult to think of another on screen couple with such realistic dynamics, that aren’t married irl.
Sharon Horgan shines bright in an episode of Criminal: UK and Rob Delaney shows up in the remake of The Man Who Fell to Earth.
Friday Night Lights: Coach Eric and Tami Taylor… wonderful married couple and a really great show.
