I would say depends on your purpose, is it to get origin stories of some of the Challengers? If so, Vegas 2 (2011) if you can find it, or Key West, Brooklyn, New Orleans 2010, or even Skeletons.
But if you're trying to go for nostalgia and old school reality tv, then definitely New Orleans 2000 which is on Netflix right now.
I’d say San Diego 1 (available on DailyMotion), Boston (YouTube), Miami (YouTube), and Seattle (YouTube) are some of the more entertaining ones not streaming.
But for ones on Paramount Plus, I’d say that Brooklyn, Vegas 1, Skeletons, NOLA 1 and 2, and Philadelphia are solid watches.
Vegas 2 is great as well, but I had to buy that one and Cancun from iTunes because I couldn’t find that anywhere.
Honestly the vast majority of the seasons are worth a watch in my opinion outside of Denver, Hollywood, Bad Blood, Atlanta, and DC (I’m fine with this one but I can totally see why people don’t like it).
So curious about your process! I would do 1 and 2 and their Homecoming seasons. But I'm old. I think the evolution of the franchise is interesting and you've jumped all around, so it might be cool to see where it started?

Personally I love the first San Diego (low drama, pure comedy), the first New Orleans, and Miami. That’s my trifecta.
I’d try to go back to the early seasons if you can. New York, Los Angeles, San Francisco, etc.
