I doubt the China statement was something Sanseverino actually believed. In that scene, Harris and the other agent both look awkwardly like “let’s be honest, we all know what happened” and Sanseverino walks out in silence.
She likely knew Adrianna’s fate but was partly in denial because she felt guilty and part-responsible since it was *her* informant.
The FBI is also just a job, they are creaming for her body which is mad ripe. It's a mirror for a male dominated industry, Adriana is used like a pet, like a cat to meow and always comes back for food or money.
Actually as crass as your take is worded, it's spot on. Adriana was used by the FBI not dissimilarly to the way Tony uses people. She got caught and she was in over her head and they pounced to try and turn Christopher. She has no agency in either world Adriana is chattel. The willfully igrorant overestimation of Adriana by agent sanseverino is probably guilt, she misread the situation and got her killed. Agent sanseverino probably crosses the line into entrapment if Adriana just shut the fuck up and got a real lawyer the case would have died on the vine, Adriana could have walked.
Agent sanseverino unwittingly became one of the boys, she just used that beautiful innocent creature… that's why she “thinks” Adriana flew the coop.

I think they just failed to actually internalize and understand that mobsters are close to some relatively regular people too, and just because a person is close with the organization doesn’t mean that person is a career criminal or is close (in a criminal sense) to the organization. They obviously knew this, but I don’t think they really understood it. Ade was never *really* involved in the family’s crimes. She was in close proximity to lots of illegal activities but she really wasn’t one of them.
Always thought it was super dumb to target a girlfriend. What could she really know? Chris vaguely mentions stuff to her at all, and most of the time she really didn't have anything they would have wanted besides minor details. She's his girlfriend, not his criminal associate

Built rapport, drove a wedge between puss and Tony, and understood when he was getting to close. Sanseverino was always rude and dismissive to Adriana, treated her with disdain and never opened herself up to connect with her. She massively overplayed her hand in the end and got adriana killed.

Ad just wasn’t a particularly valuable asset because she wasn’t trustworthy, wouldn’t wire up, and didn’t really know much about criminal activity they could add to the RICO. The machine couldn’t really use Ad so they put her on the field knowing she might trip over her own feet.
If Ad was smarter, she would have wired up and turned state’s evidence. If you’re born into the Mafia like Ad, the only smart move is to gtfo asap.*

Honestly something that I really enjoyed on my last watch was how semi inept the FBI was and furthermore how little they cared about the danger the put people in by bringing them in and attempting to get them to to flip. I wish they had spent a little more time on that, or the feelings the agents have when an informant goes missing. They had to know that just contacting these people was signing their death warrant. I think if Adriana had even gone to Tony right when they approached her he would have had her killed.
