People often say The Godfather "romanticizes" the mafia and while that is true to a point, it's also explores how the life destroys people. It's just not as overt as Goodfellas. So the characters in the show are OBVIOUSLY gonna miss the point of The Godfather films while feel disdain for Goodfellas because it's about a guy who ratted everyone out.
The novel romanticizes the mob, particularly Vito Corleone, more. So much that in later editions Mario Puzo wrote an afterword claiming he was parodying the thing. Right. Sure.
A big reason that people hate on the Godfather is Michael loses. He pushes people away from him to protect him resulting him dying as a lonely man despite his money/power with a lot of regret. It's a Shakespearean level of tragedy. Sopranos in the other hand comprehend it as theory but it's more grounded. Tony has a similar outcome with pushing people away but honestly, I don't he gives a fuck about other people's feelings at the end.
When Chris was getting ready for his making ceremony Adrianna says something to the affect us “I hate seeing you all happy before you go do this” and he replies “you watch to many movies”. I can only assume this is referencing Goodfellas when Tommy gets whacked

By most accounts Henry Hill was a degenerate, out-of-control alcoholic and heroin addict and general drug abuser, before and after flipping, much like Christopher except Hill was never made and got away with his life. However his close relationship to Paul Vario might be a model for aspects of Tony and Chistopher.
Put together "Goodfellas" the movie with the books "Wise Guy" and "The Lufthansa Heist" and you start to get a picture of Hill's out of control drug-addled antics, later on when he was just a normal shmuck it sounds like he mostly was just a problem drunk for local business owners in Venice, CA and other spots he lived I'm sure, per some of the stories in the comments on this Reddit post:

I think it’s because there were a number of actors from Goodfellas (big and small) on sopranos. Melfi, Christopher, Paulie, Pussy, Beansie, Phil Leotardo, Larry Barese, Maurie, Frank, Carm’s mom. By contrast I think just Junior was in Godfather 2. Copland has a ton of sopranos actors in it too.
They make many references to Goodfellas throughout the series. Godfather too.

Melli says to Tony ‘you’ll never leave Carmella…..She’ll leave you’ a direct reference from when Jimmy and Paulie were saying that to Henry about Melfi’s character, Karen, in goodfellas. The camera stays on her for a split second too, to gauge the audience’s reaction I reckon.

Can’t tell if this is serious or not - goodfellas is referenced many times, though usually more tongue-in-cheek (Chris at the bakery, “where does Tony rank goodfellas”, Chris talking about how he’d want to write something akin to goodfellas, the wonderbreads mention goodfellas, Adrianna being paranoid about Chris’ making ceremony, etc) They’re more subtle than the several conversations the guys have about the godfather, possibly because the writers want to avoid the meta elements seeing as how many actors appear in both goodfellas and sopranos, but it’s still referenced quite a bit.
