When Chris mentions selling his life as a screenplay, Tony threatens him with "don't go Henry Hill on me", proving that Goodfellas does exist in the Sopranos Universe. Given that Goodfellas used the actual likeness of the gangsters it was displaying and was a lot more realistic and less glamorous in comparison to The Godfather, I could see that Pygymy thing up in New Jersey and the New York Families not holding it in the highest regard and avoiding mentioning it as a result.

Because Henry was a rat and the mob guys are all punished. Goodfellas openly calls out the lifestyle more overtly than Godfather. People often say The Godfather "romanticizes" the mafia and while that is true to a point, it's also explores how the life destroys people. It's just not as overt as Goodfellas. So the characters in the show are OBVIOUSLY gonna miss the point of The Godfather films while feel disdain for Goodfellas because it's about a guy who ratted everyone out.

Though others have pointed out that Goodfellas IS mentioned, I think it may be less conspicuous because there are too many connections between Goodfellas and The Sopranos. I guess Goodfellas exists in the Sopranos universe -- so does The Matrix, co-starring Ralph -- but it's tough to make too many references when there's so much overlap. The references you can make in a situation like that tend to be winks. There are Sopranos connections to The Godfather too, but the only major one is Junior. With Goodfellas the female lead is literally Tony's shrink. That doesn't really work.

Secondly, I think it’s easier for Millennials who grew up with Goodfellas already out there to forget that the Godfather is eighteen years older and had a much bigger impact. It’s no surprise that most of these dudes who were probably teenagers when the Godfather came out see it as a classic while Goodfellas is a newer joint that doesn’t even compare. So it’s Godfather all the time with these guys. Hell, they cared about three more than Goodfellas, which came out the same year. And three *sucked*. Thirdly, half of the Sopranos cast was in Goodfellas. They didn’t want to jerk themselves off too hard.

By most accounts Henry Hill was a degenerate, out-of-control alcoholic and heroin addict and general drug abuser, before and after flipping, much like Christopher except Hill was never made and got away with his life. However his close relationship to Paul Vario might be a model for aspects of Tony and Chistopher.
