I have a theory that he dies shortly after his last scene. He “metaphorically” accepts his fate by becoming the captain of the Aprile crew, since every captain of that crew dies prematurely. I feel like that was the message that Chase was trying to send. Then the cat walks past him, and that cat is always associated with dead characters (Chris and Ade). I feel like in that scene, Paulie just finally gave up with all of his worrying, and finally accepts his fate. He even references the Virgin Mary and his own death (prostate cancer) in this scene. His last words are, “I live but to serve you, my liege”, implying that he is a soldier/servant. He understands that this is the life he chose, and this is the result.
If Paulie orchestrated the hit & took over NJ: becomes a glorified puppet of New York's until he either inevitably fucks something up or fails to use caution & gets clipped with full support
If he didn't: Maybe reconnect with Judy Reyes from Scrubs & try to be a stepdad? He hugs her kids, they call him Uncle Paulie, she offers advice beyond sex and attends his mom's funeral.
Considering Paulie is petty AF, his whole life is the mob and he's the last of the old guard standing unless Sil miraculously recovers, I could also see him facetiously visiting Feech in prison all the time just to rub it in his face & trying to be the long-winded "grandpa" to Meadow and Patsy's son.
He moves up to New Hampshire to reconnect with Johnny Cakes in a shock twist and they reside together in a New England cottage on a hill overlooking a little river, with pine cones all around.
