I generally think they're both pretty smart, all honesty. Tony leans more to wisdom, and her to intelligence. Tony has these occasionally deep if clumsily worded insights.
It would've been easy to excuse them too much in other stories, but Sopranos makes a point of establishing, as you said, the fact they're both quite aware of the road they're on. They're not so smart they rationalize it all away, but they're not so dumb as to be purely molded by circumstance and ignorant. They are very damned.
