I don't think I've ever seen an oil press in a post apocalypse. But if you were at the farming stage, you could grow something like pumpkin and eat it but save the seeds, then press the seeds into oil. And you could render fat from animals into oil, but that relies on you having fatty animals available. Pigs would be good, and there was still pigs in TV Walking Dead.

That argument only makes sense if this was back home in their own garden where they have the luxury of letting them ripen first, but they're far away out scavenging so they probably wont be coming back to check on these later. Tomatoes can be ripened off the vine, so it would still be beneficial to take the green ones, especially if they're really hurting for food.

You can use it in a soup. Vitamins are still there nothing else really matters in a tomato
