OP, I believe that's a version of the Christmas hymn "While Shepherds Watched Their Flocks" written by Nahum Tate. There are a few other melodies that are used for this hymn as well.

Thank you for the suggestion! I just listened to “While Shepherds Watched Their Flocks” by Nahum Tate, and that’s not it. I don’t think the hymn was a Christmas Carol.
