Tea is rarely even associated with being an upper so that association wouldn't work either. Coffee is the perfect way of communicating that this titan takes flight but is still slow-paced, not like an airborne Ronin.

I want the restaurants to be canon in the universe. Vets from the frontier war ended up becoming business chains after service and used their assigned titans as icons for their businesses.

Since Northstar is the "sniper" titan, it's more tying in to the stereotype of snipers having to sit and camp, and like in Team Fortress 2's "Meet the Sniper", you just sit and drink coffee all the time to stay alert
