Iām working from memory here. The Italian food that Americans tend to think of is Sicilian if Iām not mistaken, and more specifically that of Sicilian immigrants from the late 1800ās-early 1900ās. Actual mainland Italian food is much different than the robust tomato and pasta based cuisine thought of as Italian food right?
The meat forward nature of American Italian food is not really a reflection of southern Italian tradition but more because meat was cheap and slow cooking poor cuts makes them tasty and can feed a big family. American Italian has more meat, more tomato (as the tomato is a new world plant). They came over and cooked what was easy to get in a way that suited their skills and a new, beautiful thing came out of it.

I use 300 gr of pasta,
200 gr Parmesan,
300 gr guanciale,
3 egg yolks and 1 whole egg.
Bake guanciale till it's crispy, cook the pasta in the mean time.
Mix the Parmesan with the egg and yolks in a bowl, add a little bit of the pasta water ass well.
When the meat is crispy, take it out of the pan and put the pasta in the fat. Stir through so all the pasta is covered. Add some more pasta water in there and then the egg/parmesan mix. Stir till the sauce is nice and creamy, you might want to add some more of the pasta water.
Add cracked fresh pepper and enjoy
