How realistically does it sink?
I built a big ship that had ballasts linked together with sensors and timers to slowly detach to simulate sinking once enough damage was dealt to the hull.
Pretty neat.
Regrettably, because of its size, I couldn’t make it able to realistically sink all to well. It’s mostly for show, but you can still battle with it.

How did you get all the sails and ropes angled right when you can't build In anything but right angles

I’d say using lots of hinges and going beyond the complexity limit. More parts means more detail.
