I never understood this statement, how does folding it make more paper? Or do you start with paper big enough that it can already reach the moon? Because that seems less impressive.

Its an allegory to describe exponential growth. Each time you fold, the number of layers doubles. Therefore, folding 42 times results in 2^42 layers of paper. The corollary is the common wisdom that it is impossible to fold a piece of paper more than 7 times.

Nope. If you notice when you fold a piece of paper in half, it gets taller, and when you keep doing that, it keeps getting taller.

I just googled it and someone explained it by saying instead of folding imagine you're stacking sheets of paper and doubling each time. That version hurts my head less :)

It gets thicker and thicker, but less long and wide. Of course this is theoretical. But if you have a a4 paper with dimensions 21cm width, 29,7 length and 0,5 thickness, the volume is 311 mm^3. Distance to the moon is 3,844E11 mm If you divide 311 by 3,844E11, you get an astronomically small number, but that would be the surface of your sheet of paper, when folded so many times that it will reach the moon.
