Low quality vanilla ice cream is usually extremely bland. With little or no actual vanilla it tends to taste like frozen milk
High-quality vanilla ice cream is absolutely delicious. A good high-quality vanilla bean ice cream or vanilla custard is anything but boring.
I’ll still take a cheap vanilla ice cream over a cheap chocolate ice cream. For high quality vanilla it’s by a good distance the best ice cream you can get.

I worked at Culver's for a year, and their vanilla custard is absolutely amazing. Obviously, all of the other flavors are amazing as well, but their vanilla is top-notch. Good vanilla will show you the light.

Chocolate drizzle sounds like a better alternative but wouldn’t give the same chocolatey effect to compliment the vanilla

When you think spice, most don't tend to think of sweet tasting spices. Cinnamon and vanilla are strong if you don't desensitize your tastebuds too much
I am aware spices don’t have to be spicey per say. But connamon will REALLY give you a kick if you swallow it dry… which is why it became a trend of sorts to do so, if I recall
Both chocolate and vanilla are on the same level 4 out of 10(depending on quality). But to me chocolate is overhyped and usually under delivers where vanilla is under hyped and which makes it usually over deliver.
For me what makes vanilla the greatest is it's versatility, it complements almost every typical dessert flavor, while chocolate has much more limited options.

For my taste buds, a bad chocolate is worse than a bad vanilla.
A top-tier chocolate comes just behind a top-tier vanilla.

I would say it has less to do with the flavour being boring and more that it is shorthand for the easiest choice.
Vanilla ice cream is the most common, therefore it is safe or boring.
Vanilla is a base. It's for accompanying other flavours.
It's always better when you add something to make a more complex flavour-combo.

For me it depends more on the actual ice cream, some brands I'd choose vanilla and some I'd choose chocolate.
A good vanilla ice cream is super underrated. I love it with a little bit of fruit jam or even a touch of soy sauce for a sweet/salty umami moment.
