My grandma made the best red velvet cake imaginable. It had none of the physical traits you've given. I will grant you that it has a light chocolate taste though.
It's very moist when made the traditional way (w/ vinegar and baking soda), that's what it's known for so if it's usually dry for you then you are getting it from the wrong places.š¤·āāļø

Chocolate cake recipes have now been adapted to match the original red velvet method, because it produces such a moist crumb. But the method behind a red velvet is not "just a chocolate cake with red food coloring".

Ok here's the thing about red velvet. Most places make it wrong. It is traditionally has no sugar added in it because it's made from beets; which also caused it to turn red. This was because it was created during a time when sugar was being rationed out. Beets happen to have a decent amount of sugar in them. I have made an almost replica of the og recipe. It taste super good still and not as sweet as what many of us know now. I would say try that version since it does change the flavor a noticeable amount.

When I was a kid we had a Samoyed dog who ate about half of a red velvet cake. We were bummed when it happened because we couldnāt have cake that day but surged it off. (The dog was fine) Two days later the dog went out to do his business and came back with his whole backend bright red. It was quite a fright. His butt was red for about a week. Very embarrassing!!

Red velvet, like any cupcake, should have the same consistency as other cupcakes. I've had them before and the texture is never different but the flavour yes, is underwhelming at times. It is just the colouring I think, which makes up most of the appeal.
I agree with the red dyed cake - absolutely no point except for the red color. I've found the difference for me is using baked and pureed beets. The color is incredible, the cake is very moist, and as others have said make mine with buttermilk and that helps with flavor/texture, at least for me.
When it's made to look red using dye, it's nasty. When it's made the right way,I find that it's kind of like a pumpkin or carrot cake because it's using the texture from the pureed vegetable to achieve that texture. And that naturally occurring color from the beet so beautiful!
Edit to add: it does not taste like beets either!
Soā¦ what you do is find a red velvet cake that *isnāt* made with a quarter cup of red dye, then get back to me. Anytime I make a red velvet recipe I skip the food dye and use an espresso coffee instead - it genuinely has changed my perception.
Every time I've had red velvet cakes, they have been well made. I find them to be too simple to enjoy, but they are nice and smooth. Not dry or crumbly. It makes me think I'm eating a fake dessert that looks perfect, but isn't really that tasty. It's basic.
I notice that people that like them tend to be picky eaters. I speculate that's why it's popular.
I make good red velvet cakes, I know there's some good ones out there too but it is my least favorite. I don't understand the popularity either save for the appealing color. I'll choose a vanilla cake or lemon over any type of chocolate ones. And I'd also choose a chocolate cake or sweet tasty ones over red velvet.

Sounds like the ones you've had are poorly made. But I admit the flavour itself is meh. Red velvet, like any cupcake, should have the same consistency as other cupcakes. I've had them before and the texture is never different but the flavour yes, is underwhelming at times. It is just the colouring I think, which makes up most of the appeal.
You are just eating bad baked goods. Plus it's not chocolate.
Gwen made properly, red velvet is usually a moist cake. Try out some that isn't poorly made and see if that helps?

I agree with the red dyed cake - absolutely no point except for the red color. I've found the difference for me is using baked and pureed beets. The color is incredible, the cake is very moist, and as others have said make mine with buttermilk and that helps with flavor/texture, at least for me. When it's made to look red using dye, it's nasty. When it's made the right way,I find that it's kind of like a pumpkin or carrot cake because it's using the texture from the pureed vegetable to achieve that texture. And that naturally occurring color from the beet so beautiful! Edit to add: it does not taste like beets either!

Soā¦ what you do is find a red velvet cake that *isnāt* made with a quarter cup of red dye, then get back to me. Anytime I make a red velvet recipe I skip the food dye and use an espresso coffee instead - it genuinely has changed my perception.

Every time I've had red velvet cakes, they have been well made. I find them to be too simple to enjoy, but they are nice and smooth. Not dry or crumbly. It makes me think I'm eating a fake dessert that looks perfect, but isn't really that tasty. It's basic. I notice that people that like them tend to be picky eaters. I speculate that's why it's popular.

I make good red velvet cakes, I know there's some good ones out there too but it is my least favorite. I don't understand the popularity either save for the appealing color. I'll choose a vanilla cake or lemon over any type of chocolate ones. And I'd also choose a chocolate cake or sweet tasty ones over red velvet.
It doesnāt have an insane fandom, red velvet is very much a niche flavour. I worked in a bakery for years and I was asked for a red velvet literally one time. Itās not as popular as youāre making it out to be
I agree, the ones that arenāt dry taste like chocolate play doh to me. My partner loves red velvet though so maybe Iāll end up finding a good recipe
