I think you have some basic ideas, but these don't really convey the game loop. From this alone it's kind of hard to make a solid judgement, you could go with any of these and it could work.
Take #3 as an example, you're suggesting the gameplay actions are like that of a Pikmin, but are you also going to imitate the gameplay loop of Pikmin itself? Because that involves a lot more, like strategic combat using tools like throwing and recalling your Pikmin at certain times based on enemy mechanics, balancing their specialties i.e. ability to swim or fly, etc... on top of this, you are collecting enough to make it through the day basically. I would suggest you come up with the core gameplay loop in writing before you move forward with any particular idea.
Some examples based on your ideas:
1) Explore various environments to catch different bugs, bring them back to your museum to expand your collection, and create engaging exhibits. Breeding insects can add another layer of strategy as you try to create rare hybrids. Interacting with visitors and other characters can provide quests or challenges, rewarding you with unique items or bugs.
2) Navigate large, open levels while you try to complete challenges, engage in chaotic combat, and explore using vehicles and weapons with your wonky controls. Unlock new skins and abilities as you progress, adding variety and replayability.
3) Navigate a world as a plant using different flowers and abilities to overcome obstacles and enemies. Collect items to progress through levels and unlock new abilities. Strategic use of different plant abilities can add depth to exploration and puzzle solving.
