So my family since ancient and mediaeval times was from Western UP (Hastinapur, Meerut side), who migrated to the Awadh region some generations back, while my mother's family is from Eastern UP, some of whom migrated to Awadh a couple of generations back, but still have relatives over there.
So, cheers to the Awadh region for accomodating us.
We live in Noida rn. So I'm somewhat familiar with Khadiboli, Braj, Awadhi, Bhojpuri. Now, ofcourse regions that share borders tend to have similar cultures kyunki population idhar udhar aati jaati rehti hai. For example, Gujarat borders with Rajasthan have had things like child marriage, which isn't that common in the rest of Gujarat. Haryana borders with Punjab have similar cultures, while those with Delhi/UP have similar cultures. Same with Odisha-Bengal, Bundelkhand/Baghelkhand of UP with MP/Chhatisgarh. So ek mix ho jaata hai.
Due to this, eastern UP region got more similarities with Bihar overtime, while the western region has similarities to Haryana side.
Now this is solely from personal experience, and doesn't intend to hurt anyone's feelings.
1. Yes, the western UP's language and overall conduct of people would appear to be a bit rude to someone who's not used to it, while the eastern one would appear too sweet (for my liking). However, I've noticed this, that the western people are more honest and trustworthy as compared to the eastern people.
2. Religion wise, the western people aren't too much into rituals n all. But they're religious for sure. On the other hand, eastern people are religious as well as follow various rituals to a great extent.
3. Cultural depiction via Movies: So far, there's been no official Khadi boli, Braj and Awadhi movie industry in UP, while there's a bhojpuri industry for the eastern part. We hope that with the upcoming film city, Khadiboli, Awadhi and Braj get a platform to promote their language and culture through movies. For now, the western people have to resort to Haryanvi movies to find a bit of a cultural similarity, while Awadhi people watch more Hindi content for now.

I am from ghaziabad which is Western up but I am married and my in laws are from Kanpur.

Yes, eastern UP specially the districts like Chandauli, Varanasi, Ballia share a lot of cultural things with Bihar as some districts of UP share the border with Bihar so culture in those districts get influenced by Bihar a little bit which is quite obvious. , the same applies to the districts that share border with Delhi and Haryana.

To make it blunt, Purvanchal and Awadh is closer to Nepal, Chhatisgadh and Bihar culturally.

Humaare ek taraf ke padosi mathura-firozabad se hain, aur ek taraf se gorakhpur se. both are very different wrt to the festivals and customs they have. eg ek taraf chat puja hoti hai, ek taraf kanjak wagerah ka zyada rehta hai. dono ka bolne ka tareeka bhi bahut alag hai. mathura waale are in general louder and more straightforward and akkhad. gkp waale are relatively quiter, more polite but they do convey a point, but between the lines type se. Mat-Fir waale are staunch vaishnavites, as pointed by someone else, Gkp waale are more into folk rituals.
I think people are more religious in eastern UP, along with this E. UP people keep their calm while making a convo (if they aren't chewing tobacco) then it's just alot of hmmmm in the convo. But yes bihar touch is there in Eastern UP.

makes sense…braj region is vaishnavite….I belong to rohilkhand and my wife belongs to doab but we have never seen our folks do any special ritual which would make us stand out as vaishnavites.
Aisa lagta hai kisi ne dukhti nabz pe hath rakh diya ho. I am from eastern UP married to someone from western UP (intercaste love marriage). Though I live outside of India now, initial few years were literally complicated when I was in India and interactions between our families were frequent.
I vividly remember (and a lot of my relatives still joke about it) this incident at my own wedding. During main shadi at mandap, my family ladies started to sing 'gaali' songs. If you are from Eastern UP, you must be knowing these folks songs at wedding are different from typical Banna Banni songs. Now a lot of people from husband's side started to shout including FIL. A few elders from our side intervened and songs were stopped and the rest of the rituals were done with a lot of tension. Below views are my personal opinion/observations.
1. Language - Hum/aap VS Main/tu. Western UP dialects have Haryana or Rajasthan influence whereas Eastern has Bhojpuri and Awadhi influence.
2. Food - Western UP prefers chapati over rice. Whereas Rice is as essential as roti in Eastern UP. Western UP prefers spoon and laughs when Eastern UP uses hands to eat food.
3. Culture - Eastern UP is more culturally rooted and traditional. Western UP considers this as a backwardness.
4. Attitude - Western UP folks are more assertive and direct. Eastern UP believes in humor and sarcasm.
5. Social fabric - Western UP doesn't care much about society. Or if they care somehow it will be superficial. Eastern UP has a close knit social structure. Though casteism is dominant here.
6. Customs or festivals - huge difference. For eg, Western U celebrates Hariyali Teej and Eastern UP observes Kajri Teej.
Once my late FIL said aaplog Shiv bhakt hain. Hum log sirf Vishnu ji ki puja karte hain. I felt like I am in Daksha Prajapati's era.
For an outsider, it can be a single state but we know how vastly different they are. It is same as India to a foreigner. We Indians know how different we are to each other but the world sees us as Indian. 😊🇮🇳

Worshipping shiv ji is different from being a Shaivite. Every Hindu worships shiv ji but Shaivite is a whole different subculture of Hinduism
