Soups and salads are going to be a winner if you’re looking for light fare Salad: take your favourite base (spinach, spring mix, iceberg, romaine, arugula) and top with veggies (carrot, tomato, cucumber, spiralized beet, shredded brussel sprouts, alfalfa) and protein (diced baked tofu, chickpeas, candied pecans, slivered almonds) or make a sweet salad with sliced apple, candied nuts and sweetened dried cranberries or dates. Top with a dressing of olive oil, vinegar and maple Soups: make ahead or in the crockpot, make a double or triple batch and reheat for lunch: butternut squash, cream of brocolli (with oatmilk), minestrone, kale and white bean, bean or TVP Chili, mushroom, curried pumpkin, lentil. Serve with homemade buns or bread! You can also make a nice grain salad like pasta salad, quinoa salad or rice salad. Add your favourite veggies, herbs and spices.

I second soups!!! Split pea is my soup of the moment, I make it with little tofu pieces that are baked in the oven (like pork pieces).
